All of the chemical compounds that contribute to coffeeâ€™s flavor evolve naturally. The palate records the sensations of aroma through olfactory cells located on the nasal membrane. The process of sensing odors is called olfaction, which is the simultaneous sensation of thousands of distinct gaseous compounds. The nasal membrane has the capacity to sense not only the types of compounds present but also their intensity. It interprets these aromatic sensations as unique patterns, and in the mind records them as distinct odors.
The palate records the sensations of taste through buds located on the tongue. The process of sensing taste is called gestation, which is the simultaneous sensation of four basic tastes: sweet, salt, sour and bitter. Through a process called taste modulation, these basic taste sensations interact with one another to produce the wide range of taste experiences.

Effective blending occurs when coffees from various regions are chosen, and roasted to a specific roast degree to fully develop the best attributes of that bean in order to release the most pleasing characteristics to create aroma and cup that satisfies the most discerning palate. Then combining various beans to create a cup that has flavor, body and a pleasing mouth feel.
